In this PCOS-friendly Lemon Garlic Hummus recipe, canned chickpeas are blended with lemon, garlic, tahini and olive oil for a smooth, creamy and perfectly delicious snack, dip or condiment that’s ready in about 10 minutes.

Lemon Garlic Hummus


  • Total Time: 10 minutes
  • Yield: 1 1/2 cups 1x

Ingredients

Scale
  • 1 1/2 cups cooked Chickpeas (from the can, drained and rinsed; 1 15-oz can)
  • 1 small clove Garlic (minced or finely chopped; or to taste)
  • 23 Tbsps Tahini
  • 1 large ‘juicy’ Lemon (juiced; about 1/4 cup)
  • 3 Tbsp Water
  • 1/2 tsp Salt
  • 1/2 tsp Dijon mustard (optional but recommended)
  • Fresh Ground Black Pepper (to taste)
  • 2 Tbsp Extra Virgin Olive Oil (plus more for drizzling on top if desired)

Instructions

  1. Add all of the ingredients, except for the oil, to a food processor and blend. Slowly stream in the oil and continue to blend for about 3 minutes until very smooth.
