Green Goddess Dressing meets smashed chickpeas meets melty cheese… I’m obsessed.
These smashed chickpeas are my favourite veggie equivalent to the classic tuna salad. You still get that creamy sauce – in this case it’s lots and lots of Green Goddess Dressing and NOT mayo. You still get texture from the roughly mashed chickpeas and chopped veggies. You still get toasty bread and melty cheese.
Yep. This is pretty much a mayo-free, tuna-free, gluten-free and very vegetarian tuna salad sandwich, friends!
And it’s delicious!
This veggie take on tuna seriously makes the best lunch. Hearty. Filling and so very green!!
And it’s ready in about 20 minutes and makes enough for 4 enormous sandwiches, which means smashed chickpea sandwiches all week long!!

The Green Goddess Dressing gives these canned chickpeas the brightest, herbiest most lovely taste. It’s fresh and light and has so much flavour. And definitely not your ordinary chickpea salad.
To smash the chickpeas, I use my potato masher but even just a fork will do. You want a rough texture – some chickpeas will be left whole others are in more of a paste form. Whatever looks good to you. The translucent skins of the chickpeas that fall off the chickpeas and clog up your masher just add to the creaminess of the chickpea salad so just stir them into the mix. (For whatever reason, the chickpea skins always weird me out for some reason but just go with it!)
I added some chopped onions, red pepper and celery but you can omit, add extra or use whatever veggies you have on hand to the smashed chickpeas. Even just smashed chickpeas, an extra squeeze of lemon and green goddess dressing is so good.
And all that melty cheese! The cheese is what makes this sandwich more of a melt and takes lunch to the next level. I used a mozzarella and cheddar blend that melted up perfectly and was oh-so ooey and gooey (but any shreddable cheese will work here).
The hardest part of this sandwich is the baking. Not getting distracted by Pinterest and letting your toast burn (set that kitchen timer, people!!) and then waiting for the cheese to get to that perfect point of brown and bubbly, ooey and gooey! Best served warm.

Green Goddess Smashed Chickpea Sandwich

This Healthy Green Goddess Smashed Chickpea Sandwich recipe makes for the perfect lunch. Made with chickpeas, creamy green goddess dressing and lots of veggies, this sandwich is best served with lots of melty cheese on top!
Ingredients
- 1 can chickpeas, drained, rinsed and patted dry (about 2 cups of chickpeas)
- 1/3 cup Healthy Green Goddess Dressing, or more to taste
- 1/2 cup chopped vegetables (onions, celery, bell peppers, jalapeño peppers, kale – whatever you have on hand)
- Salt and pepper, to taste
- 4 slices bread (use your favourite gluten free sandwich bread)
- 1/2 cup shredded cheese (I used a combination of cheddar and mozzarella; or more to taste)
Instructions
- Preheat oven to 425F and line a baking sheet with parchment paper or a baking mat for easy clean-up.
- In a mixing bowl add the chickpeas. Using a potato masher or a fork, start to roughly mash the chickpeas, leaving some chickpeas whole for lots of texture. Add the dressing, chopped veggies and lemon juice, stirring until well combined. If the chickpea mixture seems to dry, add a little bit more dressing. Season with salt and pepper.
- Place bread on the prepared baking sheet and bake for 3-5 minutes until the top side of the bread is golden brown and… toasty. (Keep a close eye because most gluten free breads goes from nicely toasted to burnt in a matter of seconds!!)
- Remove from oven, flip bread so the golden brown side is down and top each slice with equal amounts of the chickpea salad and shredded cheese.
- Return the bread to the oven and bake for another 7 minutes or so until the cheese is melted and bubbly and the chickpea mash is just warm inside.
- Serve immediately.
Notes
The chickpea mash can be kept in the fridge and then assembled into a sandwich as needed.
