This homemade herby sauce is a take on chimichurri that is absolutely perfect on fish, meats of all kinds, veggies, grains and more. This cilantro sauce recipe is all things flavourful, citrusy, earthy, herby, savoury and delicious.


Cilantro Herb Sauce

- Yield: about 1 cup 1x
Description
This Cilantro Herb Sauce takes just minutes to make but can add a whole lot of flavour to just about any meal. Made with fresh cilantro, lemon juice, garlic and olive oil it pairs perfectly with just about any fish, meat or veggie dish and is deliciously PCOS-friendly, gluten-free and dairy-free.
Ingredients
- 2 cups Cilantro Leaves (tough stems removed)
- 1 cup Parsley Leaves (tough steams removed)
- 1 (large) Garlic Clove
- 4 tbsp Lemon Juice
- 1/4 tsp Salt (I always use real salt)
- 1/2 cup Extra Virgin Olive Oil
- Fresh Ground Black Pepper
Instructions
- Add the cilantro and parsley to the food processor and pulse to finely chop.
- Add the remaining ingredients (garlic, lemon juice, salt, oil and fresh ground black pepper to taste) and blend until combined and smooth, about a minute.
- Season with additional salt, pepper or lemon if needed.
- Transfer to a bowl or air-tight container and refrigerate leftovers for up to 5 days or freeze for longer.

Here are some tips to help make great cilantro herb sauce…
I use a combo of parsley and cilantro here because A. I always have them in my fridge waiting to be used up and B. I love the flavour of them together. If you wanted to use all parsley or all cilantro you can do that too.
Add the herbs to the food processor before anything else and pulse until finely chopped. This ensures a better consistency of your sauce.
Lots of lemon juice (about all of the juice from a big juicy lemon) and lots of olive oil give this sauce zesty and brightness and make it the perfect consistency.
Make this Green Herb Sauce your own…
More flavour? Add in spices like cumin or coriander.
Make it spicy? Add in fresh jalapeño pepper or another hot pepper.
Make it creamy? Soooo good when you mix equal parts with a paleo-friendly mayonnaise.

Can cilantro herb sauce be frozen?
Yes, freeze it in a zipper-top bag, container or even individual servings in an ice cube tray and thaw at room temperature or in the fridge.
This herb sauce is a great way to use a bunch of leftover cilantro. Because fresh cilantro leaves don’t freeze all that well, making an herb sauce like this one and freezing it for later is one of the best ways to preserve cilantro so it doesn’t end up in a wet, mushy mess in the bottom of the fridge.
Is cilantro herb sauce healthy? Is it PCOS-friendly?
Yes and yes!
This sauce is made with only good-for-you ingredients like herbs, lemon garlic and extra virgin olive oil so it’s nutrient-rich, delicious and definitely PCOS-friendly.

What to serve with cilantro herb sauce?
I love pairing this sauce with chicken, pork and salmon of all kinds. It’s really great with steak too. This sauce can also dress up roasted veggies and grains in a delicious way too. It’s so versatile I’ve mixed it in Mayo for a green dipping sauce, served it was tacos and burrito bowls and even used it as a salad dressing.
