A super good smoothie packed with only super good for you foods – this Blueberry and Greens Smoothies has frozen blueberries and fresh spinach blended with strawberries, bananas and yogurt too.  And you can’t even taste the spinach!

I have been LOVING smoothies lately. I know it’s November and all – but it hasn’t started to feel like November yet which means smoothies are still fair game, at least in this kitchen.

But not just any smoothie, I’m talking smoothies loaded with leafy greens and delicious berries with a little protein punch from greek yogurt like this Blueberry and Greens Smoothie. It’s a gluten free, superfood-packed and crazy delicious breakfast or energizing snack for later in the day.


I’ve pretty much been on the biggest smoothie kick of my entire this past month and I am feelin’ good! My morning smoothie has become my new morning coffee… almost.

Don’t worry coffee – I still need you too!

Funny enough, the smoothie recipe idea comes a stockpile of blueberries has also made its way into my freezer. This past summer, for whatever reason, berries just looked way to good to me. So, each and every week at the farmer’s market I would buy the biggest bucket of blueberries I could find. I would eat some of them and then get super paranoid that they were all going to turn mushy and bad while in the fridge (and what a waste and complete tragedy that would be) so I would follow this tutorial to freeze all those blueberries perfectly every time. This happened every week for about a month.

Needless to say, my freezer is FULL of blueberries. And this has my husband seriously questioning whether or not I have a problem.

MORE ABOUT THIS BLUEBERRY AND GREENS SMOOTHIE RECIPE…

The blueberry flavour is intense here… and for obvious reasons. I suggest a mix of blueberries and strawberries – because those two berries are always in my freezer. But you can use all blueberries, or any combination you’d like.

I also really love blueberries here because they hide the green colour of the spinach so well.

SIDE NOTE: Pretty food always tastes the best, right? Blending green spinach with a lighter coloured berry like strawberries yields a brown coloured smoothie, which even though it may taste delicious, it doesn’t look delicious.

And there’s a full (packed!) cup on baby green spinach in this smoothie. That amount is almost getting into salad territory… And you can’t even taste it!

I always add some frozen, super ripe banana to my smoothies. Frozen banana yields the creamiest, dreamiest smoothies going. It also gives this smoothie some sweetness, which also helps to hide the spinach flavour.

And for an extra sweet smoothie, add a little drizzle of honey too. And for an extra creamy smoothie with a touch of protein, add some greek yogurt too.

Description

Ingredients

  • 1 cup (packed) baby spinach
  • 1 cup frozen blueberries
  • 1/2 cup frozen strawberries, or just more blueberries
  • 1 small frozen banana, about 1/2 cup or so
  • 1/4 cup Greek yogurt (plain, vanilla or berry flavour yogurt works well here; optional but recommended)
  • A handful ice cubes, optional
  • 1 teaspoon honey, optional
  • 1 cup cold water

Instructions

  1. Add all ingredients to a high speed blended (or food processor or NutriBullet) and blend until very smooth. (Adjust the consistency of your smoothie if necessary by thinning with more water or thickening slightly with more ice.)
  2. Serve immediately.

Notes

My green of choice for smoothies is baby spinach. Although kale or swiss chard will work well too. I like to buy the bags of pre-washed greens so they are conveniently waiting in the fridge and ready to go straight into my blender.

    I LOVE using blueberries in smoothies! My kids love that it’s purple and I love that it tastes amazing and is packed with antioxidants! 🙂

    I’ve still definitely been loving smoothies too despite the temperature cooling off. Jealous of all of your frozen berries! I wish I’d thought to buy more over the summer to freeze. There’s just something about frozen in-season berries that taste that much better!
