This Easy Peanut Noodles with Veggies recipe is a healthy take on one of my Asian favourites. This stir fry is made vegan and gluten free with broccoli, soba noodles and a simple, creamy (and delicious!) peanut sauce that will not disappoint.
Healthy, delicious take out-fake out (as the wonderful Rachel Ray would say), does it get any better than this as we approach the weekend?
Let me tell you, I love noodles. I love large heaps of noodles on my plate/bowl/still in the pan. I definitely love getting to the part where I can eat ALL.THE.NOODLES.
No shame in my game, that’s for sure.
But in all seriousness, this recipe is E-A-S-Y. It’s a little bit magical when that creamy/spicy/super savoury/peanutty sauce meets noodles (and not just any noodle – soba style buckwheat noodles) and tender-crisp and beautifully vibrant veggies.
