A recap of recipes, favourite things and good things from around the internet from April 2017.
COOK MY BOOKS
Cook My Books is the monthly cooking challenge hosted by Chelsea over at Chelsea’s Healthy Kitchen. It’s a pretty fun idea inspired by that stack of cookbooks taking over our bookshelves. You know, the ones that never get used because Pinterest just makes it too easy. Yeah. So, each month we challenge ourselves to cook just 3 recipes from our cookbook collection.
I have been enjoying the challenge so (you can see my past Cook My Books here and here) and I really love breaking out a couple books each month, flipping through each one to find the perfect recipe for the season. Here are my 3 delicious dishes from my books for April:
SAVORY CHEESY KALE PANCAKES FROM LET THEM EAT KALE BY JULIA MUELLER
QUINOA TABBOULEH WITH OLIVES FROM LET THEM EAT VEGAN BY DREENA BURTON
CHAKRA CAESAR SALAD FROM THE OH SHE GLOWS COOKBOOK BY ANGELA LIDDON

FAVOURITES IN FOOD
Savoury Pancakes. Seriously. Have you ever made a savoury pancake before. They are the perfect, cheesy, garlicky addition to breakfast or lunch… or dinner too. Those savoury pancakes above – those were made and eaten on repeat for all of April and I see that trend continuing well into May.
Kombucha. The fermented tea beverage that has gotten a lot of hype in the last couple months or so. Everyone loves to love the ‘booch and for good reason. These drinks not only taste delicious (for the most part), they are loaded with tons of healthy bacteria for a healthy gut. The one down side to kombucha, the price. It isn’t a cheap beverage by any means (here in Ontario they run for about $5 a bottle). So this month I’ve decided to make my own. It’s a little scary and I kind of feel like something is growing in the cupboard above my fridge but I am hopeful. I’ll be sure to give a full update next month for sure.
OTHER FAVOURITE THINGS THIS MONTH
Yoga. I’ve been doing yoga from the comfort of my own living most days a week for the last month and a bit and I am feeling fabulous. Some days I take it easier than others and pretty much just stick to a simple stretching and breathing routine and my mind is constantly blown for how de-stressed, re-centred and balanced I feel afterwards. I am loving Yoga.
This Brightening Facial Scrub from Acure Organics. It is so very green and thick but it works! I have been using this scrub once or twice a week for a little while now and I love it. It is a little bit abrasive and coarse (and very green) but it leaves my face feeling so smooth and soft and refreshed. Highly recommended and the price is definitely right as well.
